Who knows what Pietro Gentilini is thinking as he watches, with folded arms, that row of freshly baked panettone in the biscuit factory that bears his name? He seems proud of that cake that during the Christmas holidays characterised the production of the historic confectionery company located right in the heart of Trieste-Salario, on the corner of Via Alessandria and Via Novara.
The two workers seem intimidated by the presence of the “master”, and yet careful not to drop even one of those jewels that had just come out of the large oven, a precious tool for a pioneer of the confectionery art like Pietro Gentilini.
The photo, taken from the volume “Come Eravamo Trieste Salario” (Typimedia Editore), dates back to the first decade of the 20th century, and is part of a precious series of shots concerning this pioneering confectionery company with its point sale annexed. The first commercial success is linked to an intuition of Pietro Gentilini: the Osvego biscuit, a clear derivation of the Anglo-Saxon biscuit called Oswego.
