In the outdoor area at 162 Via di Ripetta, from 12 noon to 10 p.m. non-stop, Il Marchese – freely inspired by the movie Il Marchese del Grillo – offers an interesting drink proposal in its Amaro Bar. Inside, you can try creative cocktails made by bartender Fabrizio Valeriani, who specialises in combining classic and experimental mixing.
Each drink is created from a selection of unusual ingredients such as vegetables. All drinks do not contain animal proteins: instead of albumen is used chickpea aquafaba, which has the same emulsifying power. There is not cow’s milk neither, replaced by vegetable milk from coconut, almond or oats. Each drink is served in crystal glasses with hand-cut ice. To accompany the cocktails, the Amaro Bar offers appetizers curated by Daniele Roppo, who also is specialised in mixing traditions with novelties and reworkings. The Marchese’s wine list is comparable to an encyclopaedia: it contains more than six hundred labels, ranging from niche to vintage, selected from both Italian and foreign wineries.
Wallpaper and velvet pay homage to the French taste typical of the 19th century aristocracy, making the Amaro Bar as elegant and refined as its offerings. If you want to stay for dinner, Il Marchese awaits you in its osteria. Aperitifs are served from 6.30 p.m. to 9 p.m., while Il Marchese is open for both lunch and dinner. And as Alberto Sordi would say: “Che fai nun venghi?” (Don’t you come?).
